Lupini beans make fabulous vegan low carb falafels! Here in the UK, pre-prepared Lupini beans are almost impossible to buy so you have to prepare your own using dried beans. This can take anything from 8 to 14 days (I know I know, but it’s worth it!)

I followed this guide here, there is NO mistaking the bitter taste when they’re not ready to use! If you’re in the US then pre-packed lupini beans are readily available (lucky you!).

These low carb vegan pancakes are my favorite breakfast. If you miss bread and toast, this is a great alternative at only 0.7 per serve!

You can play around with the recipe, just adjust the water content to suit.

Sometimes I’ll add Indian spices and have with a vegan keto curry.

Another nice variation is grinding up some pecans into a fine flour and adding a tablespoon. Add nutmeg, cinnamon and a bit of sweetener of your choice if you need it. I find the pecan flour makes them sweet enough.

Hard to believe but, I’ve managed to create cinnamon pecan pancakes with LESS THAN ! CARB PER SERVE!

I’ve eaten them with Violife cream cheese and blueberries. They are also yummy with peanut butter, in fact, any nut butter would work!

You can make up extra mix and keep it in the fridge. Just let it warm to room temp before cooking or it will be too hard to spread into shape.

You can find the almond pancake recipe here, but watch this space, I’m going to try this with macadamia nuts next!

Everyone loves a chocolate brownie and I was told  “no way you can make a vegan keto chocolate brownie”.

Well, if you’ve read any of my journals, then you’ll know as soon as someone tells me I can’t, then I do!

It took a bit of fiddling as my first attempts were a bit dry. I discovered it’s better to undercook a keto brownie and let it cool in the pan before attempting to slice it up.

Overcook it and you get a dry cake, it tastes ok, but moist is better.
