Keto Raspberry Jam who would have thought! This is so simple to make, there’s not a lot I can say about it. It makes a deliciously sweet and tart jam. You can use it on flackers, pancakes, in cake, anywhere that takes your fancy!
It only has 3 ingredients and take 20mns or so to make.
Invest in good cookware
Use a good cast iron pot if you have one (good for iron levels too).
I’ve had my set for many years, well worth the investment, it’s very hard to burn the backside out of one!
I plan to try this same method for a cranberry jelly for the holiday season. I think it will work well with a good, low carb nut roast (in the developing stage!)
Ingredients
- 2 cups of fresh raspberries
- ¼ cup erythritol grind to a powder like icing sugar
- 2 tbls chia seeds

Instructions
- Add the raspberries and sugar to a pan and bring to the boil stirring constantly/
- Simmer for around 10 mins till the mixture thickens slightly.
- Add the chia seeds
- Simmer for a further 10 mins
- Leave to cool, jar and store in the fridge.
