Vegan Low Carb Falafels

Lupini beans make fabulous vegan low carb falafels! Here in the UK, pre-prepared Lupini beans are almost impossible to buy so you have to prepare your own using dried beans. This can take anything from 8 to 14 days (I know I know, but it’s worth it!)

I followed this guide here, there is NO mistaking the bitter taste when they’re not ready to use! If you’re in the US then pre-packed lupini beans are readily available (lucky you!).

You can serve them on their own as a snack with some low carb dip or as part of the main meal. You can put them in low carb wraps, in fact, anything you do with “normal” falafels.

You can serve them in buns with salad and a low carb dressing.

I served mine on a bed of wilted spinach with some Vegenaise Chipotle and Kimchi.

Finishing the falafels off in the air fryer gives moistens them nicely, they can be a bit dry.

At less than 1 net carb for each ball, they are a great addition to any low carb diet, not just a vegan one!

Thanks to Meg over at clean keto blog for the inspiration for this one!

  1. Thanks for the recipe. I am excited to try it. I have a question. Do you remove the skin on the lupini beans before adding them to the recipe?

  2. I believe there’s a mistake in the amount of lupini beans. Only 6 grams, or .21 ounces, combined with the almond flour will yield only maybe 2 small falafels, not 10. Could you please correction? I’d love to try your delicious looking recipe!
