Lupini beans make fabulous vegan low carb falafels! Here in the UK, pre-prepared Lupini beans are almost impossible to buy so you have to prepare your own using dried beans. This can take anything from 8 to 14 days (I know I know, but it’s worth it!)
I followed this guide here, there is NO mistaking the bitter taste when they’re not ready to use! If you’re in the US then pre-packed lupini beans are readily available (lucky you!).
Eating your lupini falafels
You can serve them on their own as a snack with some low carb dip or as part of the main meal. You can put them in low carb wraps, in fact, anything you do with “normal” falafels.
You can serve them in buns with salad and a low carb dressing.
I served mine on a bed of wilted spinach with some Vegenaise Chipotle and Kimchi.
Finishing the falafels off in the air fryer gives moistens them nicely, they can be a bit dry.
At less than 1 net carb for each ball, they are a great addition to any low carb diet, not just a vegan one!

- 6 tbsp tbsp pre prepared Lupini beans
- 3 tbsp almond flour
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp spicy paprika
- 1/2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp coriander leaf
- 2 tsp lime juice
- 1 tbsp coconut oil
- Preheat oven to 400.
- Put all ingredients in a food processor except for air fryer oil
- Mix in food processor till thoroughly combined
- Divide into 10 and roll into balls
- Bake for 20 mns to set. These can then be cooked in an air fryer for 15mns, turn halfway through
- Leave to cool for 10mns
- Can be frozen and reheated
You can prepare these in advance and heat in an air fryer for 15mns (turn halfway through).
They also freeze well.

I’ve done it with skins and without, both work and removing the skins takes ages!
I believe there’s a mistake in the amount of lupini beans. Only 6 grams, or .21 ounces, combined with the almond flour will yield only maybe 2 small falafels, not 10. Could you please correction? I’d love to try your delicious looking recipe!
My apologies, it is supposed to be 6 Tablespoons! I’ve fixed the recipe now. 🙂
